Instructions:

For the folded bread with goat cheese and figs, first mix flour, sugar and salt for the yeast dough. Dissolve the yeast in the lukewarm water and stir in 1 tablespoon of the flour mixture. Set aside pre-dough for about 5 minutes.

Knead butter, eggs, advantage and flour mixture and add mineral water. Then mix in the yeast. Knead into a smooth dough. Form into a ball and let rise, covered with a damp tea towel, in a warm place for about 60 minutes. The volume should double during this time.

Meanwhile, prepare the filling. To do this, cut the figs into strips. Mix everything except the figs.

Grease a loaf pan.

Knead the dough again and roll it out to about 50 x 30 cm. Spread the cream cheese mixture on top and sprinkle the figs on top. Cut the dough widthwise into strips as wide as the loaf pan is high. Fold each strip in an accordion shape so that it is about as high as the loaf pan is wide.

Place the dough pieces on edge in the loaf pan. To do this, it’s best to place the loaf pan on its wide side and place the accordion pieces in, stacked on top. Cover again with a damp tea towel and let rise for about 30 minutes.

Preheat the oven to 180 °C. Bake the folded bread with goat cheese and figs for about 45 minutes. Let it cool briefly, lift it out and bake it until it is soft.
