Prepare pears (ready to cook, e.g. peel, remove woody parts and dirt) and cut into small cubes. Place in a frying pan and soften with a tiny bit of water and juice of one lemon. Mix pear puree, sugar and natural yogurt in a baking bowl. Add a dash of Williams and form the dissolved gelatin into the pear mixture. Stir well.

To stir, place the baking bowl with the pear puree in a larger baking bowl filled with water and ice cubes.

Fold the stiffly whipped cream into the mixture. pour into desired dish (coupe, baking bowl, champagne glasses-glasses, etc.) and refrigerate for one to 120 minutes until set. Either turn out or bring directly to the table in the glass.
