Remove the peel from the parsnips, then either grate finely or cut into tender strips. Mix with sour cream and egg yolk and season.

Then, using a tbsp. heaps in the frying pan with hot oil form, by means of two tablespoons form small taler and roast them until crispy. Drain on a kitchen towel.

The Rösti can be served with almost any dish or salad.
