Instructions:

For the pancake pizza, wash tomatoes, remove greens and cut in half. Wash, clean and halve or quarter the mushrooms. Dice the ham.

Make a pancake batter with eggs, milk, flour, baking powder, mineral water and salt by mixing all the ingredients together with a whisk or hand mixer and then let it swell for 10 minutes.

Melt butter in a frying pan and fry pancakes in batches on both sides. Immediately after turning each pancake, sprinkle oregano, ham, tomatoes, cheese and mushrooms as desired on top of pancake, cover with pan lid and let melt over for a few minutes. Repeat the process until the dough is used up.

Serve the pancake pizza garnished with washed and plucked basil leaves.

Preparation Tip:

Mozzarella, sun-dried tomatoes and bacon are also suitable fillings for pancake pizza.
