For the Finnish pepper cookies, first cream the butter with the sugar. Then sift the baking soda into the flour and add to the butter and sugar together with the whipped cream.

Boil the sugar beet syrup with the spices and add to the dough while it is still warm. Wrap the dough in plastic wrap and let it rest in the refrigerator overnight.

Preheat the oven to 180 °C. Dust the work surface with flour and roll out the dough very thinly (2-3 mm). Cut out cookies from the dough, place them on a baking tray and bake in the oven for 5 minutes.

Preparation Tip:

Attention: process the sugar beet syrup quickly, as soon as it cools down it becomes tough and solid and can no longer be mixed with the rest of the dough!
