Maybe your new favorite bean dish:

Rinse beans, add cold salted water, bring to a boil and simmer on stove for 10 min.

Cover and simmer gently at low temperature for about 2 h until beans are tender but not mushy. Drain and set aside.

Heat the oil in a frying pan and sauté the onion with the garlic and pepper until soft, but do not brown.

Add the tomatoes and cook for about 5 minutes. Season with sugar, pepper and salt. Stir the beans as well as the long grain rice with 450 ml of tap water into the tomato sauce and let the long grain rice swell over low heat with the lid closed. “Moros y Cristianos” can be served with all meat dishes.
