For the Minute Steak with Oven Fries, wash the pork loin steaks, pat dry, brush both sides with soy sauce, let sit.

Wash the potatoes, peel and cut into sticks and cook in boiling water for about 10 minutes, drain, dry and let cool. Mix the mayonnaise and put it in the refrigerator.

Turn up the oven to 220 degrees convection. Mix sea salt and 1/2 espresso spoon of piment d’Espelette in a bowl, add potato sticks, drizzle with sesame oil and mix.

Spread on a baking sheet lined with parchment paper and place in the oven. Bake for 15 – 20 minutes until golden brown.
