For the mini doughnuts, first melt the butter and let cool. Brush the mini doughnut tray with one third of the melted butter.

Separate the eggs. Beat the egg whites with a pinch of salt until stiff. Mix yolks with butter and milk. Sift flour with baking powder and add sugar, cinnamon and a little salt. Then fold in the yolk mixture and finally the beaten egg whites.

Heat the mini doughnut pan on the stove until the butter bubbles. Pour about 2-3 tablespoons of batter into each of the bulges and bake for about 4-5 minutes on each side.

Sprinkle the mini doughnuts with powdered sugar before serving.
