Peel onions, halve and cut into rough cubes. Peel the carrot. In a saucepan, let out the lard, sauté the onion cubes until translucent, add the sauerkraut and pour in the clear soup. Add bay leaf, juniper, ground caraway, salt and pepper to taste. Grate the carrot into the sauerkraut. Rinse the apples, remove the core and cut the apples into twelve slices. Cut the sausages into thirds and score them crosswise at each end. Cut the bacon into twelve bacon chops. Toast the chops in a small amount of fat. Fry the potato pancakes in oil. Just before serving, fry the apple slices, the sausage pieces and the bacon kaemme in oil. To serve, first take a slice of potato pancake, on top a unit of sauerkraut shape, then a cutlet. Cover with a second slice of potato pancake. Put the apple slices on top. Garnish with sausage and bacon.
