Radishes rinse, thinly remove the peel and cut into thin slices. Separate radishes from the green and rinse. Set aside four pieces for garnish. Cut the rest into thin slices. Remove the skin from the onion and cut into rings.

Scrape limburger with kitchen knife and cut into corners. Arrange radish slices on plates like a carpaccio. Place radish slices on top as well. Place limburger slices in the middle.

Mix oil, beer, vinegar, apple juice and chives to a marinade, season with salt and freshly ground pepper and spread evenly over the Limburgers. Form onion rings over it and refine with pepper from the mill.

Decoratively score the radishes and place them briefly in the water so that they separate like flowers. Put on leaf parsley and put the radish on top of each. Serve with rye bread.
