Instructions:

Beat the eggs in a food processor until foamy. Gradually add vanilla sugar, sugar and salt. Mix flour, 1 pkg vanilla pudding and baking powder, sift and fold in.

Line a baking tray with baking paper and spread the batter evenly on it. Bake at 180 °C for about 10 minutes. Allow to cool slightly.

In the meantime, place the cherries in a sieve, drain and collect the juice.

Prepare a pudding from the remaining two packets of pudding powder and the cherry juice, but only bring it to the boil very briefly. Immediately fold in the cherries carefully. Spread the mixture on the pre-baked cake base.

Whip the whipped cream until stiff and spread it over the cherry pudding. Cover the top completely with the cookies.

Finally, mix powdered sugar with lemon juice until smooth and glaze the cake with it.

Preparation Tip:

Instead of cherries you can use other fruits, for example, chopped apples: in this case, prepare the pudding with apple juice.
