In a gratin dish greased with butter, alternate layers of bread dumpling slices and ox tongue strips.

Heat crème fraîche, whipping cream and apple cider and let the Harzer cheese melt in it. When slightly cool, fold in the eggs and season with ground caraway seeds. Pour the sauce over the layered casserole. Sprinkle the surface with caraway seeds.

Bake in a heated oven at 200 °C (gas mark 3) for about twenty-five minutes.
