For the green ribbon noodles, place the ribbon noodles in 2 unperforated cooking containers and fill each with water to 3 cm below the rim. Add salt and cook (at 100°C for 14 minutes or at 120°C for 8 minutes).
For the Gorgonzola sauce, dice cheese, place in a saucepan and heat over low heat. Stir in cream. Mix cornstarch and milk, add to sauce and bring to a boil while stirring. Season to taste with salt, pepper and nutmeg.
For the basil sauce, finely chop basil. Mix all ingredients together.
