Instructions:

First wash the vegetables. Clean the beans and cut them diagonally into very coarse pieces. In Greece they are broken only once or twice.

Peel the onions and cut them lengthwise into coarse noodles. Peel and slice the garlic. Heat plenty of olive oil in a wide pot and sauté the onions with the garlic without letting them color.

Add the beans and steam with the lid on for about 15 minutes.

In the meantime, remove the stalk from the tomatoes and roughly dice them.

Roughly chop the parsley. Add to the beans, season with salt and freshly ground pepper and simmer until the beans are soft.

Season again and serve hot.

Preparation Tip:

The Greek-style beans go well as a side dish with stir-fried meat or fish. But with parsley potatoes they are also a tasty vegetarian main course on their own! My mother learned this recipe from a Greek woman in Greece. It has been proven and popular in our family for many years.
