For the ginger shreds, finely grate the onion, ginger and garlic in a bowl. Add soy sauce, mirin, rice wine and sugar and mix.
Season the cutlets with salt and pepper and fry in a pan with oil on both sides. Add the sauce and sliced spring onion and bring to the boil briefly.
Rice or salad goes well with the ginger cutlets.

Ginger schnitzel tastes very good with rice and briefly sautéed vegetables.
