Wash the fillets, dab dry and season well with salt and pepper.

Now cut the fish fillets into fish sticks. From 500 g of fish you will get about 12 sticks.

In three plates prepare flour, a beaten egg and the breadcrumbs (with some thyme to taste).

Now turn the fish sticks in the flour, pull them through the egg and coat them with breadcrumbs. Knock off any excess breadcrumbs well.

Heat the oil (test with a cooking spoon) and fry the fish sticks for about 5 minutes until they are nice and golden. Turn them once. If you like garlic, you can add garlic when heating the oil.

Remove the finished fish sticks, drain on paper towels and serve with a lemon wedge.
