Quickly mix flour, butter, powdered sugar, vanilla sugar and lemon zest into a smooth dough and form into rolls about 2cm in diameter. Chill the rolls for 30 minutes. Then brush the dough roll with the beaten egg, roll in flaxseed and press down a little. Cut the rolls into 5mm thick slices, place them on a tray with baking paper with enough space between them and bake at 200°C for 7-8 minutes until golden brown. Let the cookies cool and assemble two at a time with maple syrup.
