A great pasta dish for any occasion:

Cook pasta in a large saucepan of bubbling salted water until just al dente. Drain and add to the saucepan one more time.

Meanwhile, heat the oil in a large, cast-iron skillet. Add the prosciutto as well as the scallions and fry over medium heat for 5 min, stirring occasionally, until crisp.

Clean the spinach, remove the stems and roughly chop the leaves. Add the spinach to the sauté pan, stir in the vinegar as well as the sugar and sauté for 1 min until the spinach is slightly collapsed. Season with salt and pepper to taste.

Add the sauce to the pasta form and mix well so that dei sauce is evenly distributed. Sprinkle the pasta with Parmesan cheese and bring to the table on the spot.
