First, mix grated Emmental cheese with yolks and whipped cream. Season with salt and pepper.
Briefly toast the toast on both sides. Place toasts in a buttered (or baking paper-lined) pan, spread the cheese mixture thickly and bake in a preheated oven at 180 °C for about 5 minutes.
Meanwhile, in a non-stick pan, fry the quail eggs in a little melted butter to make fried eggs.
Remove the Emmentalertoast, place the quail eggs on top and garnish with freshly chopped chives.
Preparation Tip:
If you don't have quail eggs available or don't like them, you can use chicken eggs just as well.
