Duck marinated with pumpkin seed oil with ragout of orange squash

Rinse duck, rub dry and rub heartily with pumpkin seed oil. Pepper and season with salt. Put some water in a roasting pan and put the duck in it. Cook at 200 °C for about 90 minutes. After 15 minutes add onions and greens. Turn the duck every twenty minutes to the other side, watering repeatedly. In between, brush once again with pumpkin seed oil.

When the duck is cooked, wrap it in aluminum foil and keep warm.

Shake off the fat. Now add the diced pumpkin and vanilla to onions and greens in the roaster form and repeatedly put in the stove.

Make orange zest with maple syrup and vermouth ten minutes and strain. Add cinnamon stick and cardamom and boil to syrup, then add to the pumpkin form with the diced pulp of the orange. After 15 min. the pumpkin is cooked.

The duck is carved and placed on the pumpkin vegetables.
