For the dough, first beat the eggs in a bowl. Then add the rice flour, water and a pinch of sugar and salt, mix well and let rest for 10-15 minutes. Cut the mushrooms into strips and the smoked meat into bite-sized pieces. Cut the spring onions into fine rings, the leeks into strips. Blanch the tomatoes briefly (scald them in boiling water), peel them and cut them into cubes. Then heat some oil in a suitable pan, pour in some of the batter and swirl the pan so that the batter is spread nice and evenly thin. First spread the diced tomatoes and mushrooms over it, put the lid on and let it brown very briefly. After about 1 minute, lift lid and spread remaining ingredients on top.
