For the coconut biscuits, make a water bath.

In a saucepan, mix the granulated sugar with the egg whites, the coconut flakes and the grated lemon peel. Place the saucepan on the water bath and mix until a homogeneous mass is obtained. Allow the mixture to cool.

Line a baking tray with baking paper and place the wafers on the baking paper at regular intervals.

Now mix some flour into the coconut biscuit mixture and fill the mixture into a piping bag with a serrated nozzle.

Preheat the oven to 170 °C.

Place equal-sized cups on the wafers and let them stand for about 10 minutes.

Then place the coconut biscuits in the oven and bake for about 12-15 minutes under supervision so that the biscuits do not get too dark.
