Instructions:

Germinate the alfalfa seeds for 7-8 days. Next, rinse them in a sieve and drain.

For the sauce, mix the yogurt, whipped cream, mustard, juice of one lemon and horseradish.

Peel the oranges and cut them into slices. Save some for garnishing. Dice the rest.

Core the apples and cut into narrow sticks. Cut the chicory shoots in half lengthwise and slice diagonally into 1-2 cm wide strips.

Cut the avocado in half lengthwise. Lift the flesh out of the shell halves with a spoon and dice.

Mix the sauce with the prepared ingredients. Coarsely chop the nuts. Add 3/4 of them to the leaf salad. Loosely fold in the alfalfa sprouts. Garnish the leaf salad with the orange fillets and the remaining nuts.

Tip: Use creamy natural yogurt for an even finer result!
