Clean chicory stems and carefully remove the stem. Boil in salted water for 6 min on low heat. Remove the vegetables from the boiling broth and drain. Save a quarter of a liter of the broth. Place the chicory in a greased baking dish. Melt butter in a saucepan. Sauté the flour in it. Deglaze with the gravy. Simmer the sauce for 10 minutes on low heat. Add whipped cream, season with salt, pepper and nutmeg. Cut ham into coarse strips and spread evenly on the chicory. Pour the sauce over it and sprinkle with cheese.
