Melt the light butter in a saucepan, sweat the flour in it. Deglaze with vegetable stock and milk. Bring the sauce briefly to the boil, stirring continuously. Stir in the processed cheese and season to taste with salt, pepper and freshly grated muscatel.

Goes well with zucchini pancakes, for example.

Tip: Zucchini are a type of pumpkin and therefore low in calories, rich in vitamins and easy to digest – just the thing for a light meal!
