Instructions:

* Preheat oven to 180 degrees.

* Sift flour and baking powder into a bowl.

* Mix eggs with salt, sugar and vanilla sugar.

* Stir the flour with the grated lemon zest and the egg mixture. Add the almond kernels and make a smooth dough.

Form rolls of dough about 3 centimeters in diameter.

* Place the rolls one after the other on a greased baking tray and press them a little bit flat. Bake on the middle shelf until they turn slightly darker.

* Remove the “breads” from the stove, cool slightly and cut diagonally with a sharp kitchen knife into pieces about 2 centimeters wide.

* Put the tray back in the oven and bake at a slightly lower temperature until the cantuccini are golden and firm.
