For the beef with pak choi, steam the pak choi over boiling hot water until the leaves are tender. Set aside to keep warm.
Heat the oil in a large preheated wok or heavy skillet, add the garlic and beef steak cut into strips and sauté until lightly browned, about 1 to 2 minutes.
Add the snow peas, baby corn, scallions, red bell pepper, oyster sauce, fish sauce and sugar and stir well.
Stir-fry for an additional 2-3 minutes, until the vegetables begin to become tender but are still crisp and al dente.
Spread the bottom of a warmed serving plate with the pak choi leaves and place the beef and vegetables on top.
Serve the beef with pak choi with side dishes of your choice.
