Instructions:

For baked potatoes with herring salad, first preheat the oven to 200 °C top and bottom heat. Brush 4 pieces of aluminum foil with oil.

Prick the potatoes several times with a fork, season with salt and pepper and wrap each one tightly in aluminum foil. Place the baked potatoes on a baking sheet and cook in the oven until tender, about 1 hour.

Pat the matjes fillets dry and cut into bite-sized pieces. Peel the onion, cut it into eighths and into fine strips. Wash the apples, cut them into quarters and remove the core. Cut the quarters in half lengthwise and cut crosswise into pieces.

Mix the sour cream with yogurt, mayonnaise, vinegar and lemon juice until smooth. Season the dressing with salt, sugar and pepper. Mix in all the prepared salad ingredients and season the herring salad to taste.

Remove the potatoes, wrap them from the foil, cut them crosswise, press them apart a bit and let them steam out briefly. Fill in the herring salad, grind lightly with pepper and serve baked potatoes with herring salad sprinkled with dill.

Preparation Tip:

Serve the remaining herring salad separately with the baked potatoes with herring salad.
