Instructions:

1 Heat the milk to lukewarm (approx. 30 °C) and dissolve the yeast in it. Beat the yolks with a pinch of salt, vanilla sugar, powdered sugar and grated lemon zest until foamy. 2 Add the flour and beat the mixture well with a wooden spoon. Add butter and beat the mixture again. Cover dough with a cloth and let rest at room temperature for about 1 hour; it should double in volume. 3 Heat about 3 fingers of oil to about 170 °C. Cut chocolate into 28 equal pieces. Dip a tablespoon into the hot oil. Use a spoon to cut out dumplings from the dough. Fill each dumpling with a piece of chocolate, making sure that the chocolate is well coated with dough.Bake 4 dumplings in the hot oil until golden brown, lift out with a slotted spoon and drain well on kitchen paper. Arrange baked mice, sprinkle with powdered sugar and serve garnished with apple slices.
