For the asparagus with hollandaise sauce and Katen ham, peel the asparagus and cut off the woody ends. Bring plenty of water, salt and a squeeze of lemon to the boil and cook the asparagus in it until firm.
Wash and brush the potatoes thoroughly, then cook them in salted water. Arrange the potatoes on a plate with the asparagus, the sauce and the ham.
Preparation Tip:
Do not throw away the asparagus waste but make it into soup. With asparagus with hollandaise sauce and Katen ham, a homemade hollandaise sauce is of course best.
