Make a short pastry with the egg yolks, butter, flour and spices and refrigerate for about 1/2 hour. Roll out 2/3 of the dough, spread it on the bottom of a small springform pan and bake briefly.

Then press a shortcrust pastry edge firmly in the mold.

Place the blanched spinach and the asparagus on the pre-baked base, spread the shrimps evenly on top and garnish with the tomato quarters.

Mix spices, whipped cream, eggs and kitchen herbs together and pour over the cake. Bake in the oven at 170-180 degrees for about 35 to 40 minutes.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – these are also characterized by a fresh taste!
