Cut apricots in half and remove seeds. Butter a baking dish and fill in the fruits, cut side down, one against the other. Sprinkle with sugar (1).

Mix eggs well with sugar, milk, cream (2) and vanilla sugar. Pour over the apricots.

Meanwhile, bake in the oven heated to 180 degrees on the second rack from the bottom for twenty-five to thirty minutes. The flan should be firm but not dry.
