Instructions:

For the American Rib-Eye Steak with Bourbon Varnish, first prepare the grill for direct/indirect high heat. Place all ingredients for the varnish in an aluminum grill pan and cook uncovered over direct heat until syrupy.

Wash steaks, pat dry and salt all over. Grease grill grate and grill steaks openly over direct heat (approx. 230 °C) from both sides until a pattern appears. Reduce heat (close vent on charcoal grill) and switch to indirect heat. Grill steaks with closed lid at indirect heat (approx. 200 °C) for another 15-20 minutes. Keep brushing with the varnish.

Then let steaks rest without heat for another 15-20 minutes (optimum core temperature 56-58 °C). If you like, sprinkle the American rib eye steak with bourbon varnish with coarse salt flakes for seasoning – this gives a nice crunchy effect on the palate.
