Instructions:

To make the American Cinnamon Buns, first melt the sugar and yeast in the warm water in a small baking bowl. Set aside.

In a large baking bowl, mix vanilla pudding with milk according to directions (from pudding package). Beat in eggs, salt and melted butter with a hand mixer, then add the yeast mixture. Gradually add the flour (it usually takes more than four cups of flour until the dough springs back to finger pressure). Knead until dough is pliable.

Place dough in a large greased baking bowl and let rise until doubled in size. Knead heartily again and let rise another time until doubled in size.

Using a pastry roller, roll out on a lightly floured work surface into a rectangle of dough just under the thickness of a pencil (about 6 mm).

In a baking bowl, combine brown sugar and cinnamon; set aside. Pour the (melted) butter onto the dough rectangle, spread evenly with a pastry brush and sprinkle the cinnamon/sugar mixture on top. Roll everything together with the dough, pinching the ends a little.

Cut the dough roll into pieces about 5 cm long, place them in a greased baking pan (dish) with about 5 cm between them and let them rise again to twice their size.

Bake at about 180 °C for 15 to 20 minutes until golden brown.
