Instructions:

For the pumpkin and ham dumplings, first prepare the dumplings. Put all ingredients in a bowl, gradually add water. Dough should not be too “soft”. Place in plastic wrap and let rest at room temperature for a good half hour.

For the filling, dice pumpkin, onion and ham, sauté pumpkin first (should be almost cooked). Later add onion and ham.

Let cool, then stir in the rest of the ingredients. Season well, because the dough takes the spice of the filling.

Roll out the dough thinly and cut it out with an approx. 12 cm stick form. Place the filling on top in the middle and fold. Steep in boiling salted water for about 6-8 minutes. Drain and toss in brown butter.

Serve the pumpkin-ham dumplings with lettuce, tomato sauce or spinach and grate Parmesan over the top.

Preparation Tip:

Freeze the pumpkin and ham dumplings you don't need uncooked and cook in salted water if needed.
