Cut the melanzani and zucchini into cubes, the bell bell pepper into strips, mushrooms into slices.
Finely chop the onion and stew it together with the finely chopped vegetables in a pot with a little oil and water until not too soft (water should be completely evaporated).
In a frying pan, brown the meat, add to the vegetables, season with spices to taste, mix in the sour cream.
Place the strudel dough on a damp tea towel, spread the vegetables and meat evenly on it. Roll into a strudel, brush with the remaining oil.
Bake the strudel in the preheated oven at 200 °C for half an hour.
