Instructions:

Put the salt, pepper, juice of one lemon and oil in a small screw jar form. Close the jar tightly and shake heartily.

Peel the potatoes, cut them into large cubes and roast them in 3/4 of the clarified butter so that they are crispy brown on the outside and juicy soft on the inside. Drain the potato cubes on paper towels.

Sauté the shallots and bacon in the remaining clarified butter. Add the fried potatoes and the cucumber cubes, heat and season with salt and pepper. Stir in the chives and grate a little horseradish on top.

Divide the fried potato salad evenly among plates and drizzle with the lemon salad dressing.

The fried potato salad goes well with, for example, glazed char.
